It's not cow eructions that produce methane; it's cow belches. Fine point, perhaps, but it helps to distinguish the knowledgeable from the duffers. The methane is somewhat of a problem; I have seen research papers and presentations from the University of Virginia which so indicate. Finally, grass-fed beef IS better for you; the taste is a bit different, but it actually does better on the grill and is lower in corn-based fat (and fat in general). I will say the same of buffalo - - leaner, better.
